Tuna Salad

Serves 4


2 6-ounce cans solid white tuna packed in water, drained
2 celery stalks, diced (about 1 cup)
1/2 small green bell pepper, diced
1/2 small red bell pepper, diced
1/2 cup good-quality mayonnaise
3 tablespoons capers, drained
3 tablespoons chopped parsley
2 tablespoons chopped scallions
Juice of 1 lemon
Sea salt and freshly ground black pepper to taste


1. Combine the tuna in a medium bowl with the celery, green and red peppers, mayonnaise, capers, parsley, scallions, and lemon juice. Season with salt and pepper to taste and stir to mix. Cover and refrigerate for 1 hour or overnight.
