Peter's Cofee Mug Dressing

MAKES ABOUT 1/2 CUPPut a heaping tablespoon of mustard in a coffee mug or small bowl and add 3 tablespoons vinegar (white wine or rice wine). Using a fork, stir in an about 1 ⁄4 cup olive oil to combine. Season with sea salt and freshly ground black pepper to taste. Toss with the salad or refrigerate in an airtight container until ready to serve for up to 1 week.
