Chicken Piccata

Pounded thin and lightly breaded, this chicken is a cinch to cook – seared for a mere three minutes on each side, then simmered just three more in a bright sauce of lemon, wine and butter.

Chicken Potpie with Foster’s Herb Biscuits

This dish can be made in advance and reheated. However, the topping—whether you use biscuits, phyllo, or puff pastry—is best if added the day you’re serving it, since it tends to absorb the juices from the chicken mixture.

Chicken-Arugula Meatballs

A lighter version of classic meatballs, these are flavored with pine nuts, raisins, and arugula. Try this over angel hair pasta sprinkled with chopped fresh arugula, or pass the meatballs as a hot hors d’ oeuvre. Leftover meatballs are delicious as a filling for a hoagie-style sandwich: spread crusty Italian bread with warm Zesty Tomato Sauce, tomato chutney, or Foster’s Pesto add the meatballs, then top with fresh arugula if desired.

Crispy Chicken Cutlets with a Heap of Spring Salad

This dish contains all the flavor and crunch you expect from fried chicken, but with all the health benefits of using boneless, skinless chicken breast. Plus, you get bonus points for scattering the cutlets over a tender arugula salad bursting with fresh herbs and drizzled with tarragon-infused Buttermilk Green Goddess Dressing.

Fall-off-the-Bone Baby Back Ribs

For years I played around with barbecue ribs, trying to find a way to make them so that the meat was moist and tender but also relatively quick and easy. A few years back, Shay, who worked with me since the opening of Foster’s Market, gave me her recipe for ribs, and they’re as good as any I’ve ever had. The ribs can be baked (through step 3) up to a day in advance, but you’ll need to leave them on the grill a few minutes longer to make sure they heat all the way through.
