Family Dinner Meatloaf

Makes 1 loaf / Serves 4-6

1 tablespoon olive oil

2 cups diced onions

2 1/2 pounds ground chuck

1 cup bread crumbs

1/2 cup Worcestershire sauce

2 large eggs, lightly beaten

1/4 cup chopped fresh basil

1/4 cup chopped fresh oregano

Sea salt and freshly ground black pepper to taste

1/2 cup chili sauce

 Preheat the oven to 350°F.

  1. Place the olive oil in a skillet and heat until sizzling hot over medium heat. Add the onion and cook and stir until soft, 2-3 minutes. Remove from the heat and let cool slightly.

  2. Place the ground beef, bread crumbs, Worcestershire sauce, eggs, basil and oregano in a large bowl and add the onions. Season with salt and pepper to taste and mix to combine.

  3. Form into a loaf about 9- x 4-inches  and place on a rimmed baking sheet or in a loaf pan.Cover with aluminum foil and place in the oven to bake 40-45 minutes. Remove from the oven and uncover, spread the chili sauce over the top and place back in the oven and continue to cook about 15 minutes. Remove from the oven and let sit 10-15 minutes before slicing and serving warm.
