Quick Pickles

These can easily be made up to a week ahead of and stored in the refrigerator in an airtight container.

MAKES ABOUT 1 CUP

½ cup rice vinegar

1 tablespoon sugar

2 tablespoons chopped fresh mint

juice of one lime (about 1 to 2 tablespoons)

1 teaspoon sea salt

½ teaspoon freshly ground pepper

2 small cucumbers, partially peeled and thinly sliced

1. Combine first 6 ingredients, and stir until sugar dissolves. Add cucumber, and chill several hours or overnight.
