Spring is around the corner (hopefully) which means soon we’ll have all the bright and crunchy peas, beans, and greens that make us happy to bid farewell to winter’s heavy eating.  This is where a good quality, flavorful and complex olive oil shines, and Pasolivo is our favorite.  Pasolivo is made in Paso Robles, CA, an up and coming region for wine makers and growers because of its soil and climate.  But Paso Robles is no Napa Valley; most of its producers make small-batches for small-scale distribution.  But, the Pasolivo olive oils, for example, are anything but small when it comes to flavor and quality.  This is an olive oil that actually adds to the flavor of your food, rather than masking it, or just making it greasy.
